Maaaan, it's basically a shit show everywhere these days, the worst.
Thank you! A poolish is what's called a pre-ferment, so you put a bit of yeast, water, and flour in a bowl overnight and it becomes your bubbly bread starter. Sort of like a sourdough starter, but more low-key because it's commercial yeast and less time. But it adds more flavour.
